TERROIR

The Damask rose
that grows in Pyeongchang

The aroma compounds built up through the day settle deep into the petal only in the cool night air of Pyeongchang — which is why the scent is fresher and deeper than anything imported.

This particular Damask rose grows at ROSA n VALLEY, on a well-drained mountainside in Daehwa-myeon, in clean mountain air.

AROMA

The many sides of
the rose scent

Bright, fresh, sweet. The Damask rose leaves its presence as scent, and adds a fragrant trace to the everyday.

Phenylethyl alcohol

Rose scent, deep calm

The ground note of the Damask rose — the scent of the flower itself, with a deep and settled impression.

Geraniol

Bright rose scent, balance

The bright, open side of the rose — it shapes the first impression and holds the whole in balance.

Citronellol

Sweet rose scent, ease

A soft, sweet facet of the rose that leaves an easy trace for as long as the scent stays.

Growth & bloom

Observed and recorded

Growth and flowering are watched through the season, setting harvest timing and the work schedule.

HARVEST

The fresh-flower harvest

We harvest by the condition of the flower, then prepare the sorted roses as the material each use calls for.

STEP 01

Seedling and growth care

Pruning and the management of nutrients and water prepare the year’s crop, so the blossoms come healthy.

STEP 02

Bloom check and harvest

The state of the bloom sets the harvest date; in the early morning each blossom is picked by hand.

STEP 03

Sorting

Foreign matter and damaged flowers are removed, and the rest packed to suit its use.

STEP 04

Supply and processing

Sorted blossoms are delivered or sent to rose water extraction, and otherwise prepared as frozen or dried material.
